When you first walk in, order @ the counter, get a number and find a seat. They bring your order to you. Red's uses pork shoulders and sometimes Boston Butts that are smoked with hickory. Red's gives you three choices of sauce; North Carolina vinegar, sweet tomato and Hillbilly Red's house sauce with garlic. I got the pork plate. It comes with un-sauced chopped Q, a choice of two sides and either puppies or cornbread. Mine had slaw, baked beans and puppies. The slaw, consisting of green and white cabbage with some carrot shards, was very good as were the beans and puppies. The chopped Q was good and it paired well with the sweet tomato sauce. Enjoy!
