These are the last interior photos of Interstate Bar-B-Que's dining area before the renovation starts (painting and adding new booths). This is also the first time in 25+ years that the photos on the wall of fame have been bare. Interstate pit-cooks full 15-18lb. pork shoulders for 12 hours over hickory and charcoal (a rub is added to the meat before it is cooked) and since 1979 Jim Neely has overseen it all. I had an excellent sliced and already-sauced Q plate with a good side of slaw, great (but hot) baked beans and a very good sweet tea. Enjoy!
