Can a barbeque restaurant be placed on the National Register of Historic Places? If they can, Wilber`s certainly should be given that honor. When I last stopped at Wilber`s I could see smoke rising from behind the main building. My curiosity got the best of me, so I had to find the source of the smoke. I then met the Pit-master, who was watching over the fires. I learned that Wilber`s cooks its hogs over hardwood coals. The Pit-master said that he uses oak and hickory logs. The split oak and hickory logs are burned down to coals and then used to slow cook the hogs in the Pit-house. The Pit-master said " I don’t like barbeque, I just like to cook it". Anyone can eat BBQ, but only a few know how to cook it. Bossman said his pit-master, was the best in the state. And the end product is why Wilber`s is famous, not only in North Carolina, but all over the United States. I had a BBQ sandwich with slaw and it was excellent! Wilber`s also gives you potato salad with your Q. their potato salad has a sweet, almost deviled egg taste to it, and I think its excellent too! My green and white coleslaw was also excellent. The sweet tea with lemon could not be better, and the hushpuppies were very good. Wilber`s also has livers and gizzards just in case your barbeque didn’t fill you up.
